Chickpeas are yummy!

Last night I made my first recipe from a delicious looking picture on Pinterest!



Pinterest, blogs, and the internet in general, has changed the way people get and share recipes. My grandma had lots of cookbooks, a recipe box filled with hand-scrawled recipe card and gorgeous meals cut from magazines, not to mention the recipes she had in her head, handed down from her mother and family. 

I have a shelf of cookbooks I rarely thumb through (despite how much I love the books when I get them), and as much as I LOVE the idea of a recipe box, I've yet to start one. But I love using the internet to find fun things to make, Pinterest being my new fave to look at recipes. So it made sense that I would FINALLY make one of the recipes. 

I chose a simple cucumber and chickpea salad, because when I made my weekly grocery shopping list it was 50 degrees and looking like spring. When I made it my husband was home on a snow day because we'd gotten 8" of snow. But the salad was still delicious. 

Here's the recipe...Ingredients then Instructions...

  • 3 tablespoons olive oil
  • 1 (16 ounce) can Garbanzo Beans (Chickpeas), drained
  • 1/2 cup tomato, chopped
  • 1/4 cup onion, minced
  • 1 rib celery, sliced
  • 1 cucumber, chopped 
  • 1 teaspoon garlic, minced
  • 1 1/2 teaspoons red wine vinegar
  • 1/2 lemon, juiced
  • cracked black pepper to taste

  • Heat 3 tablespoons of the oil in a sauté pan over medium heat. Stir in beans, cover and turn off heat. Set aside.Gently toss all remaining ingredients in a large salad bowl. Add beans. Then enjoy!!


I had never had chickpeas except in hummus form, so I wasn't sure what I would think, since I'm not a bean person, but I LOVED it!! I paired this fresh salad with salmon, and we had a very yummy dinner dinner.
